Trehalose
is a natural and non-reducing disaccharide ,which is made of two glucose byα,α-1,1 glycosidic bond.Trehalose
is found in seaweed and yeast and mould and mushroom and
shrimp and insect and a few higher plants etc as a stored
carbohydrate.So Trehalose is one of edible sugars from of
old.
Japan Hayashibara Company found a new method of making trehalose
by enzymes in 1993,and made it industrialization later.At
present theirs trehalose is approved by ministry of health
of China and enter China market.As a safe and new multi-functional
food additive, trehalose can be used for food industry without
limit.,and will become a new ingredient of food in the 21st
century.
Characteristics.
1.Basic physics and chemistry
mild sweetness and high quality,good
solubility and crystallization,the highest heat and acid
resistance,non-maillard,very low hygroscopicity, higher
glass transition temperature etc
2.Functionality
anti-aging of starch, anti-denaturalization
of protein,anti-decompose of oil, odour and taste rectification,
cell and tissue stability,keeping fresh,SOD activity stability,
very low decayed tooth, mild blood sugar and insulin reaction,
slow energy release etc.
